I made a few yummy things this Conference weekend. And I wanted to share them with all of you.
Quick Enchiladas
1 lb Hamburger
1 pkg Corn Tortillas
1/2 cup chopped onion
3/4 cup chopped olives
2 cups grated cheese
1 15 oz can tomato sauce
1 15 oz can enchilada sauce
(If you want it milder, add more tomato sauce than enchilada sauce)
Brown hamburger, add onions and olives and salt and pepper.
Cut tortillas into quarter pieces. Mix 2 sauces together. Layer tortillas, hamburger, then sauce & end with cheese with each layer.
Bake at 350 for 30-45 minutes.
*To this recipe you can add a can of corn, a can of black beans, and a can of mild green chilies. It was super yummy! I got this recipes from my ward cook book & it's a good & more importantly is that it really is quick!!
Spanish Rice
3 Tbsp extra virgin olive oil
1 1/3 cup long grain white rice
Heat oil in pan, toss rice for a few minutes to coat, don't let it get brown.
In a blender combine:
2 cups chicken broth
1 cup stewed tomatoes
1 TBSP cumin
a handful of onion flakes & parsley
Blend well. Pour over rice. Cover & let simmer till all the moisture is out of the rice, about 20 minutes.
*I love this rice, it' my favorite, because it's dry & has great flavor. My aunt gave me this recipe. My family loves it.
Candy Bar Cake
6-7 Milky Way candy bars (14 oz total)
1 1/2 cup butter
1 1/2 cup sugar
4 eggs, well beaten
2 1/2 cups flour
3/4 tsp baking soda
1 1/4 cup buttermilk
1 tsp vanilla
1 1/2 cup chopped pecans
Icing (recipe follows)
Preheat oven to 350 degrees. Melt Milky Way bars with 1/2 cup butter. Remove from heat and cool. Cream remaining butter with sugar. Add beaten eggs and cooled chocolate mixture. Sift flour with baking soda. Add flour alternately with buttermilk, blending well. Add vanilla and 1 cup nuts. Sprinkle 1/2 cup of finely chopped nuts in a greased Bundt pan. Pour cake batter over nuts. Bake for 50-60 minutes, or until pick inserted in center comes out clean. Cool in pan on a rack for 30 minutes. Invert from pan and cool completely. 12 - 16 servings.
Candy Bar Cake Icing
1 1/4 cups sugar
1/2 cup evaporated milk
1/4 cup butter
1/2 cup marshmallow cream
1/2 cup chocolate chips
1/2 cup chopped pecans
Combine sugar and evaporated milk. Cook to a soft ball stage. Remove from heat and add butter, marshmallow cream, and chocolate chips, stirring until all have melted. Add pecans. Drizzle over the top of the cake.
* Holy Cow, talk about rich. You have to have a huge glass of milk to go with this cake. I got the recipe from The Domestic Divas Party Cookbook. Which is a very good & fun cookbook. I use it a ton.
I hope that you'll try & enjoy a few of these yummy recipes! My kids loved them all, which is very unusual for them both to eat all of dinner. Yeah, it's a hit at least this time around!
