Pumpkin Pancakes


Ok, so I made these this morning before we went to church & I LOVED them. I've had this recipe & I've wanted to try it. I got it out of some magazine like 2 years ago. So, of course I had to share, because they were very YUMMY! Tess & Parker each ate 3.

Whisk together 1 1/4 cups flour
2 Tbsp sugar
2 tsp baking powder
1/2 tsp each of cinnamon
ground ginger
salt
1/8 tsp nutmeg
a pinch of cloves
In a separate bowl stir together 1 cup milk
6 Tbsp canned pumpkin puree
2 Tbsp melted butter
1 egg
Fold mixture into dry ingredients. Melt some butter in a skillet over med heat. Pour 1.4 cup batter for each pancake. Cook for about 3 minutes per side (*they are dense, heavy pancakes)
Serve with butter & syrup. Makes 8-10 pancakes.

* I used 1 1/2 tsp pumpkin pie spice & & then just added the cloves in. They were way good!
