
OK, I will be the first to admit that I am a Corn on the Cob Snot! Since we have lived in Idaho, I have yet to have really, really good corn. I have had people tell that the corn here is great, well, if this is what you call great, oh honey, let me tell you, it's not!!! I have bought some from grocery stores, that say local corn, I have gotten some from the farmers market, I have even bought some from people at their homes & each & every time, I am disappointed!!!
I grew up having amazing corn, Box Elder county has some of the best corn on the cob around. Its sweet & juicy & then with the butter melting down it with salt & pepper, oh, so good!
During the summer, while I was young, my mom would go & buy 2 sometimes 3 dozen ears of corn. She would come home & we would husk it, & then she would cook it & then the goodness could begin. There would times, that all we would have for dinner was corn & fresh tomatoes.
Well, I think that my life has changed, because 2 times now, we have bought some corn from Costco, that has already been husked, which is even better. . . & guess what, it was delicious. Sweet Perfect Corn! I have been so happy!
Now I know that corn is one of the least healthy vegetables that there are, but, needless to say, on a hot summer day, what is better than a piece of sweet corn & a glass of lemonade. That to me is part of what makes my summer complete.
