Pulled Pork Enchilada's

This is one of our Favorites, Pulled Pork Enchiladas, we had these the other night & even the kids loved them!


I used 2 smaller pork tenderloins that I cooked all morning in the crock pot. I put some chili powder, cumin, dried cilantro, garlic powder & a few red pepper flakes on them.
After they were cooked, I took them out & let them cool. Then you shred the pork, add a can of corn, green chile's, more cumin & cilantro & chili powder & some cheese. We fried the corn tortilla's for just a little bit on each side. Stuffed them with the meat mixture. I had a little bit of the meat left over that I just put on top of the tortilla's in the pan. Then, I put 1 large can of the green echilada sauce over them (you can use the red I prefer the green) & then I put some monterey jack cheese on to top of them with a little more dried cilantro. Let them back for about 30 to 40 minutes at 350 degrees, we served them with rice & beans! It was a hit!
